Thirsch is the historical name of our farm and winery.<\/p>\n<p>&nbsp;<\/p>\n<h3><span data-contrast=\"auto\">Vineyard:<\/span><\/h3>\n<p>25 year old vines grow on Opok soils. &#8220;Opok&#8221; is a solidified sedimentary rock, formed by marine and river deposits.<br \/>\nThe soil has a high clay content, can absorb warmth well and provides optimal ripening conditions for the grapes.<\/p>\n<p>&nbsp;<\/p>\n<h3><span data-contrast=\"auto\">Vinification:<\/span><\/h3>\n<p>Fermented on the skins for 3 weeks, aged in wooden barrels.<br \/>\nBottling: 2023<\/p>\n<p>&nbsp;<\/p>\n<h3><span data-contrast=\"auto\">Organic Wine:<\/span><\/h3>\n<p>13,5 % alcohol &#8211; 1.1 g\/L residual sugar &#8211; 5.8 g\/L acidity<\/p>\n","protected":false},"excerpt":{"rendered":"<p><span data-contrast=\"auto\">1<\/span><span data-contrast=\"auto\">3.5<\/span><span data-contrast=\"auto\"> % alcohol<\/span><\/p>\n<p><span data-contrast=\"auto\">1<\/span><span data-contrast=\"auto\">,1<\/span><span data-contrast=\"auto\"> g\/L residual sugar <\/span><\/p>\n<p><span data-contrast=\"auto\">5.8 g\/L Acidity <\/span><\/p>\n<p>3 weeks mash fermentation, storage in wooden barrels.
